The high temperatures and light summer mood call for cool, light and quick meals! My suggestion for these days is the super-easy cold tomato soup, Gazpacho, with an Italian touch, wonderful flavour and full of nutrients and antioxidants.
Tomatoes are rich in lycopene, an antioxidant from the carotenoid family. They have many properties that promote good health:
- They are antioxidant
- They protect cardiovascular health by lowering LDL cholesterol, which builds up in the blood vessels, damaging them and making circulation harder.
- They protect against sunburn
- They contribute to better vision
- And studies show they also reduce the risk of depression.
We'll also add onion to the recipe, which has
- Antioxidant properties
- It enhances the effect of the tomato
- According to studies, it helps maintain bone density,
- And it aids digestion thanks to its inulin content.
Garlic will boost the body with
- vitamins B6 and C, zinc and manganese,
- It supports cardiovascular health
- It contributes to healthy, glowing skin
- It boosts the immune system, which is essential at this time,
- And it helps prevent hair loss.
Peppers will help the body
- with the health of the digestive system,
- They are a perfect source of vitamin C, which protects and strengthens our immune system,
- They also contain B vitamins, which together with magnesium help with stress and the better functioning of the nervous system
- They are a good source of vitamin K, which helps good circulation and blood clotting,
- And they are rich in vitamin E, which means they are highly antioxidant!
The cucumber in the recipe will help balance body fluids and enhance the properties of the other vegetables!
A complete meal, then – especially if combined with a little feta, yoghurt or cottage cheese!
Ready easily in just 10 minutes. Haven't you tried it yet?
